Chicken Wraps - with Avocado, Cheese, Spinach and Basil


These chicken wraps are a satisfying meal anytime, whether for lunch or dinner, they are so quick and easy to make.  I enjoy finding new and interesting ways for adding spinach to my diet.   This is one way that I do that.  I like to make these chicken wraps for lunch or even as a quick snack.  I try different variations, but this one is the basic overall favorite.  I often use the Ole whole wheat tortilla/wraps instead of flour tortillas, I like that they are a lower carb and low calorie alternative.  I love avocados so they are a must-have when I make these wraps.  I prefer the shredded cheese blend of cheddar and monterey jack, and for added heat the mexican blend with pepper jack is good too!

Chicken Wraps - with Avocado, Cheese, Spinach and Basil


What you will need:
chicken breast, cooked, diced
avocado, thinly sliced, and/or mashed
soft tortillas
cheese blend, shredded
spinach leaves, or use any lettuce
basil leaves
yogurt dressing/caesar dressing

Optional additions:
thinly sliced-
green pepper
cucumber
onion
tomato

How to prepare the wrap:
Spread avocado down the center of a soft tortilla, add chicken, spinach and basil leaves on top of the avocado, also down the center.  Add cheese, then drizzle on dressing.  Season with salt and pepper to taste.  Fold one edge of the tortilla over the ingredients, then roll up tightly, can slice or leave whole, then serve.

Sauteed Spinach


We like spinach, and so I look for new ways to use and prepare it.  Plus, with it being a healthy 'green' addition to our daily meals, that makes it an extra incentive to try to do so. This dish was the result of a simple throw together that I created by adding crispy cooked bacon and a touch of garlic for big flavor, along with the sweetness of caramelized onions, with fresh spinach.   

I tried to keep it a on the lighter side, even though I used cooked bacon in it, by using olive oil instead of bacon grease.  By all means if you want to put it in there it would only add to the flavor I am sure!   We often use the pre-cooked bacon that we finish in the microwave, and that is what I had on hand, but cooking up fresh bacon pieces first and using the bacon drippings to prepare this recipe can be done instead.

The caramelized onion with the bacon really makes this sauteed spinach a delicious and tasty treat.  It's easy and quick to prepare too, so when I am in need of something quick this comes to mind, and I know it will be a tasty addition to about any meal!






Sauteed Spinach


Ingredients:
4 cooked bacon slices, crumbled into pieces
1 garlic glove, minced
1/2 cup chopped sweet onion
3 tbsp olive oil
1 lb fresh clean spinach

Directions:
Heat a medium to large skillet over medium high heat, add 2 tbsp olive oil and onion, cook the onion stirring occasionally until caramelized.  Remove the onion from pan with slotted spoon and set aside.  Add remaining olive oil to skillet, then add garlic and cook over medium heat for 1 minute.   Add the spinach, the bacon crumbles and onions.  Remove pan from heat and toss spinach with tongs until slightly wilted.  Season with salt and pepper.  Serve.

Spinach Salad



This Spinach Salad is a favorite of mine!  So simple to pull together with only a few ingredients, spinach, blueberries, walnuts and feta cheese crumbles.  It's tasty and wholesome, and good-for-you good!  I like to change it up by adding blue-cheese crumbles instead of the feta occasionally, because I think both work well with the other flavors.   By adding some grilled chicken or shrimp to this, it would be a great main course too!  I like to have a light dressing on this salad as to not overpower all of the other flavors.  A nice spring-time salad or anytime!





  


Spinach Salad

Serving for two.

Ingredients:
4 cups fresh Spinach
1 cup fresh Blueberries
1/2 cup chopped Walnuts
Feta Cheese Crumbles


Directions:
Place clean fresh spinach on two separate plates, top with blueberries and walnuts, and finish with feta cheese crumbles.  Serve with a light dressing.
